We had some crappy windy weather today, so I had to do this in the oven. It turned out so well, I am going to do a variation this weekend on the EGG.
Roasted some poblanos, peeled the skins and sautéd them some onions and garlic in some ham fat from some diced ham I heated up. Added this mixture to the eggs, ham and Monterey Jack cheese into a preheated CI skillet. Sprinkled the top with a healthy dose of cotija cheese.

Topped with the same poblano mixture and some store bought guacamole salsa and served with some avacado.
