Rum-Infused Sweet 'n' Spicy Baked Pineapple cooked in the Egg (with pics)

Dessert on the Egg? Sure, why not. Especially when you've used it to cook a main course, utilise the extant heat energy to cook a rum-infused dessert. I used spiced rum, agave syrup and DP Pineapple Head rub as a marinade for some pineapple rings. Marinated in the fridge overnight, then cooked on a CI plancha. Served with vanilla ice cream and heated leftover marinade, this was perfect in the back garden.
