Looks good! For next time, butts don't need to foil or rest when done (unless they finish early). Just pull and enjoy. Some of us even pull while it's still on the grid!


I hate it when I go to the kitchen for food and all I find are ingredients!

Yeah, it looked like you got off to a late start so I figured I'd mention it. No point waiting an hour or so when you could be eating. The pic I posted was taken at about 9 or 10 PM. I don't remember when I started the cook, but it took forever! Finally, one end was done, the other, not so much. I was HUNGRY so I pulled it on the grid and let the rest finish.
Most folks turbo at 350° or less. I usually go for about 320°. I put it on at 9 or 10 AM and it's ready by dinner time. But if you're happy with the result at 400, go for it. I've only done one that high and thought it was a bit dried out. Every butt is different, but I haven't gone that high since then.I hate it when I go to the kitchen for food and all I find are ingredients!
