I have to admit - getting a vessel of oil hot enough to deep fry chicken plus leaving the dome open during that time has always spooked me for fear of fire. How did you do it?Re-gasketing the USA one yard at a time

Not surprisingly, very carefully. The wok covers most of the surface of the grill and you don't need more oil than is necessary to cover a piece of chicken so I felt fairly safe.

So the operative words here are "a piece"? So you just used enough oil to cook one piece of chicken at a time? Don't get me wrong - I love to wok in my large egg, but the amount of oil during the meat cooking stage is minimal. So - carry on, Sir, but be safe as I've seen the results of oil fires and it's not pretty.wepinsf said:Not surprisingly, very carefully. I do sincerely appreciate the caution and your experience. I actually cooked three thighs at a time. Is your concern that the oil will catch fire in the wok if it gets too hot or that the oil will splatter into the base and catch fire? I may rethink this even though it worked this time.

I've deep fried in my wok on both my large and mm. The large I can close the lid should the need arise and the mm is covered entirely by the wok. Use caution and all is good.RRP said:

Yes, I should have mentioned that I was able to close the lid as well.

My concern - and maybe not for others - is from too hot of a fire coupled with too small of a wok which then lets the hot oil splatter risking it catching on fire. If you are comfortable doing it and not risking something nearby catching on fire then just forget my concern! Just the same I will stick to using my electric Fry Daddy for what little fried chicken I cook.wepinsf said:I do sincerely appreciate the caution and your experience. I don't deep-fry anymore (leave that to the restaurants) but it occurred to me, I'd rather have an oil fire in my Egg on the patio, than on my gas kitchen stove. I'm just as clumsy in both environments.

have had fires in the house, would rather they be outdoors. i dont see shutting the dome as an option, would think to just simply walk away would be a better option. seen a guy with a grease fire in a gasser, lost the skin from his elbow down to his finger tips, some one grabbed him to get him off the deck, the skin just slipped right off....walk away
