Another Overnight Butt

Got the family coming over tomorrow and they requested some pulled pork. Rubbed a 7 Lb with some Meat Church and threw it on the egg at 11 PM @ 225. Pull it tomorrow when its done. I know a lot of you pros out there do it turbo style however I really don't mind the L & S method.

    Looks awesome - going to check it every few hours or did you hook up a temp controller to babysit the protein?  I sleep well with my flameboss at night...

    Gonna be good eats-I'm all for the L&S cooks.
    225*F w/o a controller will be a bit of a challenge.  But once dialed in it will work.  
    Any update?
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    At 12:30 PM on Sunday the IT was 200 so pulled and FTC for an hour, natives were getting restless, so after an hour or so i pulled it and it was great!! love doing a butt. 225-240 all thru the night w/o a controller, in the morning it started to climb close to 240 but stayed there till 12:00 pm or so until i pulled it. I only used about 5 big chunks of apple wood, think next time maybe use more or a different wood cause it didnt have that smokey taste that I prefer, although the family likes that over a strong smoke.

    No controller, i usually have good luck with keeping the temps on low and slow between 220-250 for long period of time. The only difference I keep seeing is that when I go to sleep and the egg is dialed in at 225 when I wake up or in the morning it just starts climbing to 240-250 but never higher.

    Looks like you did an amazing job. You have inspired me. I don't have a controller. I have had good luck keeping 275 for 4 hours doing rib cooks. I see an overnight butt cook in the near future.

    Also this was a smaller butt at 7 lb usually do bigger and have found out that they tend to be a little more jucier at bigger weights imho
