Cooked it up last night instead of on Easter Sunday. On Sunday, my beagle decided to sniff out a small Copperhead snake and take a bite to the snout. It was a $1,500 vet ER visit, but it looks like she's gonna be fine. The antivenin treatment seemed to work well. Gonna hafta keep an eye on her for the next coupla days.
Anywho, here are the food pix. Originally wanted to place the roast over the potatoes, but it didn't fit on the top of the AR (and I didn't feel like swapping out the grate). 250 deg f indirect for a coupla hours until it hit an IT of 125.

Great result right there. Congrats on the cook. And best of luck with your beagle.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

Sorry Craig, already have my poke chops ready to go along with some hash and rice. Also, I hear you have snakes over there where you live. I hate snakes.Ellijay GA with a Medium & MiniMax
