Prime Rib - Finally NAILED IT!

This is the second time that I have tried Prime Rib, and I was very happy with how it turned out. Rubbed it with some Montreal Steak seasoning on top of a fine layer of EVOO. Cooked at 250 until 125 internal then allowed to rest for 30 minutes. I also threw on the ribs for the dogs.

Great cook and result right there, but I'm with @Hntnhrd here. Beef back ribs beat their pork cousins every time but your protein and your very lucky dogs.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Ok you got me. The ribs were an afterthought and I threw them on to see if we could have a little something extra while we were waiting for the PR to rest, but they were very chewy. The boxers really enjoyed them and didn't complain a bit about them being chewy...The Prime Rib however was awesome!Lake Keowee, SC

@A5firearms - stand-alone beef back ribs need around 4-5 hours at 250*F on the dome to get across the finish-line. Tooth-pick test for the win. No resistance with the meat between the bones and you are there. Next time...Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! @lousubcap,that was the problem then because I put them on at the same time as the PR so they only saw about 3 hours at 250. I have only ever cooked pork ribs, so I didn't give much thought to them. I will have to do some reading and pay better attention to doing something with them next time.Lake Keowee, SC
