Costco, how I love, and loathe thee. But where else can you get a big screen tv, luggage, ten packs of underwear, and plants,trees,  food, they even had Traegers out on display, all the while snacking on samples of crap all day. This was a sweet buy, I got seven total, foodsaver sealed and froze. Coated this one with Blues Hog, cooked it direct at grate level at 450F, occasionally flipping and searing with dome open, then letting it smoke for ten, fifteen minutes per side. Pulled off grill when center was 117 ish, immediately cut against the grain, and served. Came out fantastic,tender and delicious. I love this cut.

    Nailed it.  Most eggcellent.  Especially love the peppers and roasted garlic along for the ride.  Wish that cut was available here.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    I have One of those going on the egg tomorrow. I have had a couple Costco tri tips turn out not so tender. Just the luck of the draw I guess

    These were actually already roasted from a couple nights ago, I just reheated the last fifteen minutes of the cook. Wrap them in foil with the tops trimmed off, drizzle with evoo before cooking in 300-350 egg for 45 minutes usually.

    Beautiful cook!! Wish I could find it here. I have seen (what they called) tri tips here exactly twice. Ever. They look nothing like what I see posted from you left coast guys. And they're THIN! Wonder why they don't sell it here.

    Here's one from 2009, the last one I found. LOL

    I hate it when I go to the kitchen for food and all I find are ingredients!

    I don't want carryover cooking to take it any further than medium rare, so I pull it at 115-117, by the time im slicing it it's 120-125F, any higher no bueno.
