    So I had them trim the brisket so it's not in cryo anymore just plastic wrap then butcher paper. How long will this stay good in my fridge for? Not sure I wanna run an overnighter in this weather.

    Touchdown. $175. Said the crate had 1/10/17 on it so in the fridge they go until 2/24/17 or until SWMBO beings to **** about it.  They had LOTS of these, one was 20lbs!

    They have tri tip steaks this week for $3.99 a lb limit 6. Probably gonna go grab 6 that's a great price for ATL.

    Make sure you get them to trim it.  They sometimes don't and you'll pay for a lot of fat.

    FWIW I think when they trim it they weight it first and print the sticker, then trim it and wrap it up. So, you pay for the fat anyway.  I think that is fair though because they are priced accordingly. A trimmed brisket is always much more $$ per lb.

    Please post back on how these briskets turn out.  I'd rather get them locally then fly back with them frozen from Costco!

    I get these often and they're great.  Definitely worth the drive when on sale.

    I was extremely pleased with this brisket. Every bit as good as SRF black IMO.

    Wow! I still haven't tried my costco prime briskets, but if these are significantly better for only 70 cents more per pound that may be the way to go in the future....

    I will answer my own question (above), because I did.  45 day wet age, freezer, put on last night.  Best brisket I've ever had.  Is it wrong to keep picking at it?  I don't care if it is.

    For the win! Looks incredible!   So you kept it in the fridge for 45 days, then froze it, and then thawed it for today?  How did you thaw it?

    I threw them in the fridge after purchase for 45 days.  I made sure to ask what the pack date was on the box from the butcher.  From there, into the freezer.  Took one out Thursday night and left it sitting in water overnight.  Into the fridge Friday morning, on the egg at 6pm, 230 degrees.  Just took it off and separated the flat and point.  Flat is in the cooler wrapped in foil.  Cubed the point and it's back on the egg at 200 for the foreseeable future.

    Until I get around to cooking it. Usually 2 to 4 weeks. Thaw takes about three days.

    I can confirm that Costco at Morrow GA has prime brisket @ 2.89/lb.

    Large BGE, Small BGE, KJ Jr, and a Cracked Vision Kub.
