Midweek Quickie; Chicken & Shrimp Fajitas on the FlatTop

Felt like grillin' but needed to be quick about it. Had mouths to feed!
Went with fajitas. Was only my second time using the Little Griddle, but I really liked it.
Only issue is the heat got away from me right at the end (guess I left the bottom vent open too much). I looked down and saw nothing but bright red coals and flames and had to get the food off in a hurry! I was able to close the vents, though, and the temp came down quick enough that I was still able to use the flat-top to warm tortillas.
All in all, a fun cook. Kids loved it, which is all that really matters along with me having fun.
This is also an excellent beer;


And here'z my fourth? fajita. Only shrimp was left. Laid up on some spicy guac sauce with cheese, SC, hot sauce and such. I'd normally have more toppings, but the kids don't eat most of that and I was going with what was on hand. Good stuff.

I do sometimes pour in these nice HyrdoFlask pints that keep beer cool for a long time. But sometimes, the bottle is nice also. And it looks better in grill photos.

So, does anyone else use the Little Griddle and have temp control tips?
I'm guessing, as long as I'm very conservative with the lower vent, a runaway fire in the lump won't be an issue. Just wanted to be sure. I'd hate to set up for a long cheesesteak assembly line one afternoon and find temp control to be an issue.
For open cooking... think I can just leave the lower vent closed or only cracked? And then when I close the dome I can adjust accordingly.
