Be careful about going around 350 for the first run. The instructions say keep below 350 for the first few cooks so the gaskets can really set in. My first cook I did a meatloaf at 250ish. It came out fine.
Most folks ignore temp issue on the first run but to each his own. Top of the firebox will easily last you a couple hours at 350. Why not cook some wings while your at it? Raised of course.
Always fill it up. Lump doesn't go to waste. I did Wings and legs for my first fire/cook.

First fire went quite well. First I checked the temp gauge for accuracy with boiling water. It was very close. Filled charcoal to the ring and lit it with a Bernzomatic torch. It was easier than I expected to light. Began with both vents opened about 1" and the temp rose steadily. At 250 I closed both to about 3/4" and the temp continued to rise. At 300 I decided to throw a couple of hot dogs on. LOL! When temp hit 350 I close both vents down to 1/2" open. Held a steady 300. Shut both vents after about 2 1/2 hours. Still cooling down. Hot dogs were good BTW. I have to say I'm very surprised that there was no obvious smoke from the chimney! All in all, a good experience. Thanks to all you experts for the help. JR
