Truffle and parsley fries and "Game On" spatchcocked roast duck (with pics)

These are, at present, simply the best chips (or fries, for most readers) that I have had, served with a truffle mayonnaise dip. SWMBO now refuses to take food photographs unless these are on the menu
. Dead easy to make, the recipe is below:

I served them with spatchcocked duck rubbed with Dizzy Pig Game On rub, cooked raised into the dome at 320F/160C. I spatchcocked in the morning and applied a small amount of baking powder (not soda) and the rub. Then let the skin dry in the fridge during the day. Cooked until internal breast temp was 160F/71C (I'm not a fan of medium or lower duck), pulled, tented and rested for 10 minutes.
The fries worked perfectly with the Game On rub.

Tossing the chips in a salad bowl to get them coated with truffle oil:

Agree, it goes so well with duck, also venison and even scotch eggs. Game On and Tsunami Spin are my go to rubs for meats, with Pineapple Head for veg and bread.SmokingPiney said:Game On is one of my favorite rubs from DP.
