Flatbread Pizza without Cheese?? Ideas??
Anyone have a solution for a "non cheese" type of flatbread pizza??!?
Kids is pepperoni and pineapple with mozzarella.
Adults are drunken goat cheese, pear and prosciutto and basil with basalmic
I have one pain in the a$$ (a buddy's wife) who always gets on some random kick that changes her diet because of some soccer mom's blog she read...so she just called and mentioned she doesn't "do" soft cheese right now.
I need some solution and quick. (I already asked. My wife said finding new friends wasn't a real solution)

@Zippylip posted one a while back. I tried it and it was WONDERFUL!!! Dough, evoo, salt and black pepper and after the bake, fresh thyme. Here's his post (my follow up cook is down the page a bit).

Make an Alfredo sauce, they generally have Parm cheese which is a hard cheese. Sub for shredded or grated, ur call.Large BGE - McDonald, PA

That's basically a New Haven Style Pizza (Frank Pepe), also known as a Tomato Pie.- In a New Haven-style pizzeria, a "plain" pizza is crust, oregano, and tomato sauce with a little bit of grated pecorino romano cheese sprinkled on. I have had some great pizzas without cheese. Tomato and garlic. Simple.
However, I would tell her to fvck off. No soft cheese? WTH kind of diet is that. If you are not allergic then you don't get to request something special. Bring your own food.
(I will bend over backward for legit allegies, but not some fad diet)I would rather light a candle than curse your darkness.

Ok here was the solution.
1) the guy and I covered ground overseas together so against my crotchety "old for his age" irritable nature I obliged. Overruled by the BoB contract.
2) @Ozzie_Isaac that comment may have been the best thing I have ever seen on this forum. The lack of conflict this week has made me sad.
3) Here was the good one. Prosciutto, olive oil, goat cheese, Bella shrooms, Basil, Bosc pears...I added some basalmic reduction after the pics

My favorite grilled summer pizza is thinly sliced roma tomatoes and artichoke hearts, herb/garlic-infused olive oil, sometimes thin italian cured meats (salami, prosciutto, cappacotto, etc) and a last-minute spread of arugula.
And if her blogger-lord changes her mind again, may I suggest dark chocolate, sauerkraut and anchovy?
