Breakfast "Good Fat"ty (Pic Heavy)

My wife keeps telling me there is a difference between good and bad fats. Apparently everything I like is NOT the good kind. But I'm being told avocados have good fat.
So I did a spin on the breakfast fatty or scotch eggs depending on how you look at it.


Soft boiled eggs for 6 minutes, sliced and peeled some avocados, hollowed them out a little more, then gave a sub par attempt at some bacon lattice.
Baked for 25 minutes then heated up the Blackstone to crisp up the bacon.
Sauteed some garlic, Bella mushrooms, and spinach and topped with grape tomatoes as a side.


Add strawberries, slice and serve.

Turned out pretty good (for no cheese, sausage, bread, or Bloody Mary)

@Ima_good_egg thanks. Not my breakfast of choice but those are my wife's 4 favorite foods so it was a win for her.
