Half of a meatloaf sandwich.

Since being diagnosed with type 2 diabetes a few years ago, I have not had any white bread. Gotta watch the carbs and all that. Grilled a meatloaf the other day (my favorite egg cook) and had some leftovers calling my name for a late night snack last night. Wife had some white bread and I made a cold meatloaf sandwich, or half a sandwich anyway. Just meatloaf, mayo, black pepper and white bread.
It was wonderful. I am a simple kinda guy who enjoys simple things and this was simple and delicious. Don't think one slice of bread is gonna make a big difference to the sugar numbers in the long run.

    I did that with some ham a little while back. Ham, cheese, jalapeno, ham, roasted red peppers, mayo and more ham. Triple down.

    Yeah, I just decided one slice was not gonna hurt. Moderation over deprivation.

    I just got some Smartbuns (zero net carb hamburger buns) yesterday.  I was thinking smashburger at first but now you're making me think meatloaf sammich!

    I just got some Smartbuns (zero net carb hamburger buns) yesterday.  I was thinking smashburger at first but now you're making me think meatloaf sammich!

    Giving up bread was difficult at first, but I got used to it. I still have a biscuit ever now and then, but not often. Gotta look for Smartbuns. I have tried the low carb tortillas and they are good.

    While certainly not low carb, I might just add this meatloaf scramble to some shredded potatoes for a real breakfast hash. Thanks for the idea.
