Using the Large, what do you recommend on time/temp for a rack?

On my Lg, 275 is it's sweet spot. So, with that in mind ... for Babybacks, 275 (no foil) ... start checking them at the 3.5 hr mark. Should be done at about 4 hrs.
The bend test is one way to know their done - If you have a thermapen, 195 or so (for me) is done.I've slow smoked and eaten so much pork, I'm legally recognized as being part swine - Chatsworth Ca. -
I agree with this. Keep it simple. Bones down, flat. Depending on the particular piece of meat, they could be done in 3.5, but usually 4 or so. I use the toothpick test exclusively. Poke between the rib bones and when it releases freely, like butter, they are done. If you want fall off the bone leave them another 30 minutes, but I don't recommend doing so. Another endorsement for the toothpick test for the finish. Also, much easier than picking up a rack and obviously works with any length of rib rack.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
