Dizzy Pig Molé Chop

Fast service as usual from Dizzy Pig got my first batch or their new Molé rub here in 2 days. Made a batch of the Holy Molé sauce from their website, and got a nice thick cut pork chop at the local Grocery. Sous vide the chop at 140 for 4 hours with a dose of Molé on it, and finished on the Mini. 

 

Plated with the sauce and some smashed roasted potatoes, asparagus on the side. 

 

Makes a really nice sauce, looking forward to trying it in some black beans and some chili. Good stuff!
