Reverse seared it. And it was tasty paired with a 2005 Pinot Noir (Oregon).

What was the final IT temp on that? I always overshoot it it seems. Maybe I need to brine again.

Sprouts look good too. We do them either in half like this or shredded.
evoo and/or butter
1 small onion, chopped
2 cups shredded Brussel Sprouts
1/2 cup chicken stock
1 tbsp dijon mustard
1 tbsp real maple syrup (optional)
S&P
fried bacon
Fry several strips of bacon (to your crispness) set aside. Over medium heat, saute onions. Add chicken stock and sprouts for 4-8 minutes. Add dijon and maple syrup for another 2-3 minutes. Add S&P to taste. Serve and top with crumbled bacon.
(IMO, homemade hickory smoked bacon is best).
While this is a recipe, I typically just eye-ball everything
