Pulled Pork - The FaceDance Way

Having some family and friends over tomorrow night... 15 in total. Picked up two boneless pork butts at Costco... 16lbs total. Trimmed, scored, coated in mustard, and applied a custom rub (variation of Mickey's). I will also inject with a beer, butter, Worcestershire sauce, and spice concoction. Going to start the egg late tonight and throw the butts on as late as I can stay up. Plan is 225 for hopefully 15-16 hours with some apple smoke. I may try wrapping once it hits 165. Looking forward to the process.

Butt....how Facedance does it.Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
7am check-in... egg dipped to 200 overnight and piggy is probing at 145. Adjusted the temp and now off for a couple of soccer games... back by noon-ish.

You can just bump the temp up a little if you would rather not foil. If the bark looks good go ahead and crutch it if you like. I usually don't, but I will crutch if I am short on time.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

I would crutch, you still have 4-5 hours at that temp before it hits 200 degrees. I'd crank the egg to 250-275 as well.Milton, GA

IT JUST BROKE THROUGH... 17 hours and it's 185 and 175 in spots. Should be good.

Hope you don't get hit with the second stall in the high 180s/low 190's. If that happens dial it up to finish-you likely still have a couple of hours in front of you to get to the "probes like buttah" feel.
Definitely looking good. Enjoy the eats.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
