The journey continues with first baby backs

Homemade rub. 350 for two hours. Sauced in last 20 minutes. They didn't fall off the bone but I liked the chew. Cheers!

    They look great! If you wanted more tender you could wrap in foil for a bit :-)

  • For a clean bite i cook them till they start to break when inpick them up with tongs. For fall off the bone just cook them longer. If you wrap them you will loose that great texture on the bark

    Cooking them a bit longer after the wrap restores the bark for the most part.

    check out 321 ribs and its variations- most who wrap here do 311. 

    lots of guys don't wrap and cook fantastic ribs they tend to like a little more chew - experiment and find out what you like best :-)

    Oh if doing 311 keep temps 250-275
