Hello all,
My third cook is underway. We have been having strangely warm weather here in Nashville so it's giving me a good opportunity to get to know the egg. I did a steak yesterday at 600 and left it burning for under an hour to clean off the dome which had an almost gel like coating that I did burn off without harming the gasket.
Anyhow, here is a shot from about 45 minutes in at 300. A chunk of hickory for smoke and a cajun rub. I threw a chopped fresh jalapeño and some lime rind under the skin and I'm spritzing occasionally with apple cider vinegar/juice and olive oil. I figured the cast iron skillet would be a good drip pan and get some seasoning while at it.
I'll let you know how it turns out!

The chix will be awesome but life is too short for lite/light beer (okay for the chix).
Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -

Fwiw, Weber makes a chicken roaster that is aluminum and non stick. Easy cleanup and bird removal. Just saying it's easier than cleaning up the CI. Doesn't look nearly as cool though

Those of us that used to feel like reducing the inventory of light/lite beer on the planet would just pour half the beer out of the can, then jam the can and land the chix on the cooking grid. All low-tech here

@flatwounds- gonna be lots of beer can chix in the near-term.

That bird looks great.
And dont you jinx this weather. I have been splitting logs all day in a t shirt and I think the low tonight is only 64.
I don't care what they say about global warming. I have no need for baby seals, penguins can go in a zoo and they can stick that polar ice cap in a Yeti cooler for all I care if I can have 60 degree nights in February!"Brought to you by bourbon, bacon, and a series of questionable life decisions."
