Pork steak

I read awhile back some methods for pork steak just can't remember for sure what temps and direct or indirect. Got a couple ready for tonites cook they are not quite 1" thick and pretty meaty looking I am getting hungry already. thanks for any help

I just coat them with Dizzy Pig and then cook them for 2-3 hours at 225. Awesome piece of meat.[p]TNW

Are those off the shoulder or leg. I've had & enjoy both but haven't done those times & temps yet. Will try this weekend as I was wondering what to grill on Sun.

The Naked Whiz,[p] I grew up with them shaked and baked.. Course now I'd marinade them in a buttermilk/hot sauce mix. Seasoned flour, egg wah, corn meal, and I'd bake them.[p]

Have you tried the Dexter vinegar based thin sauce? I usually get the pork steaks cut thin , rub w/ Dizzy Dust, and put the sauce on after cooking. Good food, especially wit cheese garlic grits(baked) on the side

Grill at about 275/300 until almost done. Put them in a aluminan pan covered with BBQ sauce . Simmer for a couple of hours turning once in awhile. They will be tender and moist. Good luck, Tom

Thanks for all the suggestions guys. I got home later than I had planned so I am going to take all the advice combine it and make a SWAG (scientific wild a?? guess) an proceed I" try to post pics and results later Thanks again

Hmm, let's see - have I tried it? Got 3 bottles of it on the shelf at home - grin! (Plus one in the frig of course.) My In-Laws live down Sikeston way, so I get down there every few months. Always have to restock with that and Wickers. The In-Laws, God bless 'em, always slip a couple bottles in my stocking at Christmas. Great stuff.[p]Kelly
