Baby Backs or Spares for Super Bowl?

Family likes both... so both it is! Put one of each on each rack so I could do the bend test for each. It's been my experience that spares take a bit longer.

That's a lot of sugar! Meat candy! Spares is the only way to go in my house.

    Great looking cook right there.
I am a fan of the toothpick test for doneness as opposed to the bend.  Easier and much quicker for me.
BTW- agree with the normally longer run time with the spares.  Regardless, a banquet awaits.

Looks good!  I always did baby backs until I read on amazingribs.com the advantages of spares.  Tried those out, we won't go back!
  • I used to always cook baby backs... I'm been 100% spares for the past couple of years. The baby backs are some members of the family who prefer them.

Baby backs were done in about 5 hours and the spares came off after 6. Temp was pretty steady around 230°. Holding them right now until dinner. I'll post up a couple of pics.

Baby Backs - Moist and flavorful

St. Louis Cut Spares - Great flavor and smoke ring... My favorite between the two.
