Yesterday's Cooks...Turbo Butt, Pit Controller NOT required, Slaw, Baked Beans, Fries

Finally got the defrosted butt on yesterday. I've had a DigiQ since about a year or two into this BGE odyssey and as long as I had it, I might as well use it, right? Only for the lo n slo cooks, but I always used it for those. Well, I recently converted to turboism, but continued to use the crutch even though it's now a daytime cook and I always stay home when I'm egging. But as long as I had it...

This time, I decided not to bother. Lit the egg and brought it up to 325°. Was shooting for 320°, but it settled in a bit higher. Put the 9 lb butt on at 10:30 AM and somehow mustered the energy to walk all the way outside (in 20something degree weather mind you) from time to time just to babysit. Dead solid perfect, every single time. Not even 1° off. 325° on the nose. Must be the Royal Oak. May never use the DigiQ again!
                                                                                                             
Made some copycat KFC slaw for the sammiches and pressure cooked some "baked" beans. French Fries in the Air Fryer too. Sure was a delicious start to the weekend!




I hate it when I go to the kitchen for food and all I find are ingredients!

    Nice cook!! I like to swap up between turbo and lower and slower. 

    Been starting 225-250 for an hour or so and ramping up to finish. Works well when time crunched.

     Funny that doing the pulled pork, fries and beans in non traditional ways still allows a great final product!

     That KFC 'slaw. Does it really approximate the taste of the KFC product? If so, recipe please!

    If anything, it's a bit better! And there's nothing in it you can't pronounce! Recipe calls for milk and buttermilk. I just double up on the regular milk. It also calls for 1 1/2 Tbls white vinegar and 2 1/2 Tbls lemon juice. Yesterday, for the first time, I just used 4 Tbls vinegar, no lemon. I've made it per the recipe, but I didn't notice any difference between that and with these changes.

    I tried it once with 1/4 cup of sugar instead of the 1/3 called for. I DID notice a difference with that change. Back to 1/3 for me. I use a food processor with a shredding blade to chop the cabbage, carrot and onion.

    Thanks for the kind words, everyone. I've made the slaw and pork butt many times. I'm most pleased with the pressure cooked beans. Easy cook and only 40 minutes! I've only tried them a few times, tweaking the recipe a bit each time. I think I'll leave it alone now, though I want to try a different mustard next time. Dijon is a bit higher in sodium than I realized. 

    LOVE the air fryer, especially for fried chicken! Didn't even know such things existed until my son gave me one for Christmas.

    @WeberWho, one comment on the air fryer... apparently, it is sort of a convection oven on steroids. It has a fan at the top which blows downward through a heating element that looks like the kind on a kitchen stovetop (before they came out with those awful glass top things). The hot air circulates around the food and bounces off the bottom. 

    I don't have a convection oven, but a friend of mine does and she tried fried chicken in it, following the same process as I do with the air fryer (seasoned flour, egg wash, more flour or bread crumbs followed by a spritz of oil and then into the oven). Seemed to be delighted with the results. 

    If you have a convection oven, you might give it a shot. :)
