Wok-fried Orange Chicken with Lemongrass cooked in the Minimax (with pics)

To celebrate the Lunar New Year, and in an effort to try new things, I cooked orange chicken with lemongrass. Very happy with how it turned out, will be wok cooking in the summer using the Minimax for sure. Big thanks to @Photo Egg for pointing out why I shouldn't be using a non-stick wok, going to get a "proper" one and get it seasoned.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

I don't have the minimax but that seems like an odd grate/ring arrangement. Don't you want that wok down near the heat?

That picture is when it's simmering, which is the second stage of the recipe. Before that when I was stir frying it was much lower. I created that setup simply because I'm on the wrong side of the pond for CGS products, I think they sell a spider or woo ring or something that can do that. I believe that someone here in a previous post said they put the CGS item up one way for high heat stir fry and then the other way to simmer ... @RRP maybe?

It does indeed still cross the pond, and I've been talking to CGS about the possibility of getting stuff shipped here, really helpful people. However it's a bit expensive in terms of shipping. As we are visiting the USA again in June this year I'm going to look into getting some stuff shipped to one of our locations. We're going out with two suitcases each in readiness to bring back BGE kit.The_Stache said:
