Wild Game Sushi

Best explanation I have for it. 

Axis venison steak strips marinated in teriyaki, smothered in cream cheese, black pepper, garlic, Tony's, with jalapeños, bell peppers, and onion and rolled and wrapped with bacon. 

Indirect at 375 until probed 150.   Then covered in pepper jack cheese. 

This was the only one left to take a pic of when I got to the kitchen (my wife wanted hers medium. The rest came out perfect black and red)



I believe Axis really is the best tasting deer I have had...even better than elk or moose. I wish we could grow these things in Tennessee. (For those that haven't seen one they are the apotty reindeer looking thing.
