Playoff Brisket is on "Travis Style"

Options
just put on a 14.5lb packer Travis Style. Allegro, onions, Sam Adams, rubbed with Texas style sweet rub, sea salt pepper and garlic powder. Flame boss set at 225.

    Adventurous.  I do crawfish boils now and then so, why not beef?  I wonder if this will awaken travis from retirement....

    The reason I went this route Is for chili, I will use half of the meat and the juice for the broth. I did it once before and the chili was fantastic.

    @JRWhitee did you turn it fat side up to slice?  I can never find where to stop cutting the flat from the point after the bark has formed.  It all starts to look the same to me!

    No, I cut it fat side down. There is usually fat separating the point and flat I will use the back of the knife to find where it connects and it should separate rather easy.

    I only do it for chili, the four cups of juice generated by the "braise" is the bomb. You will see.
