Breakfast Fatty With Homemade Buttered Toast

I like breakfast, and I like things simple. But there must be intense flavor to keep it exciting. 

As for 'simple' I like my Fatty sausage to be really simple but with some 'kick.' My preferred method is to just strip the cover off a chub of Jimmy Dean Hot Pork Sausage, cover it liberally with a good rub and smoke it for an hour or so until the internal temperature gets up to about 150°. 

The reason for the 150° is that I want to be able to slice off a couple of pieces to do a quick pan-fry with a wee bit more of the same seasoning. 

This morning we had some with breakfast and it was fantastic. I smoked it Wednesday and left the chub intact in the refrigerator until ready to slice off a couple of pieces. 

This time I wish I had cooked up another slice for me. It was the flavor I've been looking for to enhance Jimmy Dean's already great flavor. 

This time it was Kelly and Bruce Underwood's "It's My Rub" All Purpose BBQ Rub. 

You've got to try it to experience the surprisingly great flavor it imparts into the already seasoned sausage. 

I also made some buttered toast using bread I made a couple of days ago. It too was outstanding, and went well with two butter-poached eggs.

Yes, this is on my New 2017 diet. And yes, I'm still losing weight, just not as fast or without the mood swings from being denied good food. I'll take 'slow' over 'no' any day.

  • my belief is that dieting shouldn't mean removing foods from your 'acceptable' list, but just easting less of it.

    that looks like suitable diet food to me, as long as you don't eat the whole thing!

    I started reading and kept thinking " man, that needs some eggs " . And then got to the part about the butter poached eggs. Breakfast of champions right there!

    I agree! That's my favorite way to make Fatties.
    I try to always have one or two on hand and just set it off to the side of the BGE when cooking other stuff.
