Pork Tenderloin Wrapped in Bacon & Veggies

I posted the a few night ago deep in an existing thread. Thought I would post a new thread to show my last cook.
I finally had time to cook the pork loin wrapped in bacon and wanted to share. My wife wanted it cooked well, we debated and started at 170 and I got her down to 155. Cooked for 2 1/2 hours at 325 until 155 internal temp. I used BGE Lump and Hickory wood chunks and the Rig setup. This was the first time I cooked without the platesetter, felt a little guilty but I got over it real fast as the rig was perfect for this cook. Chimney was much easier to control the heat too. Check out that smoke ring! Next time I will try an internal temp of 145. Wasn't a big fan of smoked veggies but they were good just the same.

Looks great. But those are some squeaky clean accessories ya got there. You should consider destroying a few of them or at least jerry rigging your set up prior to destroying something and asking the forum for help in a panic.

First time I took out the rig and stone. They will season up as the winter moves on...
