Prime Rib Sandwiches

Looking to grab a prime rib roast and make some sandwiches next week looking for some advice.
Should I slice the roast an hour or so after cooking or let it sit and then refrigerate for next day reheating?
I also have been been thinking about buying a slicer but have a carving knife I use for Brisket would that be good enough to slice the roast thin enough for sandwiches?

I would cut my slices for dinner then cool the rest all the way in the fridge before slicing. Makes it easier to get thin cuts for sandwiches. It's tedious but you can get good cuts with a regular carving knife.
