I'm going to do my first spatchcock turkey this afternoon after thawing a discount post Thanksgiving bird. planning on 375 raised direct, but other posts have suggested going indirect based on the length of cook. Anyone have good results either way? I always go raised direct for spatchcock chicken.

I always do spatchcock turkeys at 400 raised direct and get good results. If you have done chicken, just do the turkey the exact same way...it will just go a little longer.

I've just started doing turkeys for the first time in the past couple of weeks. I always do chicken spatchcock, but I've done a couple of 5-7# turkey breasts indirect around 325-350 for roughly 2 hours, give or take. Inject with some Tony Chachere butter, dust with seasoning, and go until 165. Fried turkey is by far my favorite turkey, but this is now a very, very close second.--Because I'm like ice, buddy. When I don't like you, you've got problems.

Yep, I'm more of a breast man than a leg and thigh man.timmyd18 said:@clemsontyger97 just the breast not the whole bird, right? I've got to try that

I did this 11 lb turkey earlier this evening. On top of AR, which is about 1 1/2" above the felt line. 300 degrees and believe it or not, done in an hour and 15 minutes. I think one reason why it got done so fast is that it takes up so much grill space. Don't get much air movement on the large egg. Not the first time I have had large birds get done as fast as spached chickens. Anyway it was great. Took it out and put on sheet last night, seasoned with pepper and Carribecue Lemon Garlic ( wife loves it) and out in the egg after disappointing Outback Bowl. Normally would not do this combination on turkey but what the hell...- Bettendorf, Ia with lots of time in Chattanooga, Tn. LBGE, plate setter, ar, Looft lighter, maverick et-735, Rutland gasket, Smokeware SS cap, Kickash basket, and lots of cast iron.
