I've only done 1 chuck roast and it was great. Like others have said, go to 160 and wrap in a foil pan with broth or whatever, dark beer is probably delicious. The next chuck I plan on doing all burnt ends with. They look delicious! Egg on! I'm in Fredericksburg, VA, and I have an XL and a medium. -
