Yet Another Xmas Prime Rib

Did a little prime rib yesterday - 4.5# (2 ribs) prime. Did it indirect, starting at 250F (grate). Internal was 45F. Egg wanted to keep rising so over 2 hrs it ended up at 300F when internal hit 125F. Pulled it off to rest while the endives were prepared. End result was fantastic - exactly the way SWMBO likes it - and served with Belgian endive gratin and roasted celeriac.
