Son and DIL got me a BGE CI griddle (http://biggreenegg.com/product/half-moon-griddle/). DIL also got my son one too. (he also has an XL) . We were at his place for CHRISTmas (new granddaughter - 5 weeks old )
After slow cooking a beef tenderloin to IT of 122, removed the platesetter, added the CI griddle, cranked it up to 500+ and seared the tenderloin, then let it rest for ~15 minutes. Cut it with my fork, served with homemade Hollandaise sauce, Caesar Salad (homemade bacon, homemade croutons) and The Best Roasted Potatoes Ever (http://www.seriouseats.com/recipes/2016/12/the-best-roast-potatoes-ever-recipe.html). It was a superb day. Family, food and fun - can't be beat.
