Turkey Breast - Bone in - Brining or Injecting butter? times? bacon wrapped?

so the last couple of times I brined a turkey breast it has came out WAY too salty for me.  I was thinking injecting melted butter this time.  Also, if I did a bacon sweater - Do I need to cook the bacon a little first before I put it on?  seems like bacon doesn't get cooked all way - like it very crispy.  Do I do 300 until internal hits 160?

    I personally inject using this recipe.  I've never had a dry turkey since using this technique.  I prefer it over brining for the same reasons you state.

    You don't have to do anything to it.  Stop cooking it when the coolest part of the breast is around 145-150F and it will be juicy. 

    Bacon for flavor - you can par-cook your bacon, not until it's hard and crispy, but maybe 50% and it should crisp up during the cook.

    with the bacon sweater - does it need to be thin bacon?  also, how do you get the bacon sweater to stay on the breast?  toothpicks? 

    Do I use wood?  seems like wood will give it too much of a smokie taste?

    Toothpicks, as the bacon will curl and shrink. Light smoke, something like pecan or a fruit wood. Just chunk or two will do.

    and how do you get the turkey breast to sit up?  I will be cooking 2-8lb breasts.  Should I do 300 indirect?  that will take 4 hours or so to 150-160?
  • I do  325 direct and that size takes takes around 2 to 21/2 hours...  just pull when temps get to the 150 ....
