Beef Short Ribs

My butcher give two racks of beef short ribs already cut up. I am making a Butt today but figured I would thow the ribs on during the cook. About how long should the Ribs take to cook?[p]Thanks

    I smoke beef ribs the same as I do pork ribs. Smoke at around 250 for 5 to 6 hours. Use a good rub and your in business. I cook indirect. If you don't render the ribs down they will be very greasy. Good luck, Tom

    I picked up about 22lbs of uncut short ribs... they're bigger and longer then the regular beef ribs! So I cut them lengthwise, trimmed the fat, put a good rub on them. Let them sit overnight, then smoked them indirectly at 250 for about 7 hrs. Then I wrapped them in foil for an hour. WOW were they good and tender.[p]If I ever get less lazy and take pictures of the next batck of big ol' short ribs I'll post them up here.

  • BajaTom,you mentioned indirect cooking. Do you push the coals off to the side so that they are not directly under the food?
