First Brisket!

Cooked a small brisket tonight for my wife and I for our Christmas dinner. It was a little less than a 4lb flat and cooked it for just less than 12 hours at 225 with no wrap. I did cheat a bit and turned it up to 250 after it reached 180 internal to speed things up a touch. It turned out really well. It could probably been wrapped and rested a few 

minutes longer but who can wait!! I used a heavy dose of dizzy dust and red eye express with a good coating of brown sugar. Comments

Probably closer to 10 hours but it stayed at 150-160 from 11:30 this morning until 3:30. I thought I put it on at 7:30am but my wife says it was closer to 8:30am so who knows. Haha

Yeah I agree. The temp hovered most of the cook between 210-230 degrees maybe should have been a bit warmer. Just went off thermometer.

Regardless of the details, great cook and result. Congrats on "patience" and if everyone liked it then you nailed it.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
