First Brisket!

Cooked a small brisket tonight for my wife and I for our Christmas dinner.  It was a little less than a 4lb flat and cooked it for just less than 12 hours at 225 with no wrap.  I did cheat a bit and turned it up to 250 after it reached 180 internal to speed things up a touch.  It turned out really well.  It could probably been wrapped and rested a few minutes longer but who can wait!!  I used a heavy dose of dizzy dust and red eye express with a good coating of brown sugar.
