China Box

I stopped by the place that I retired from in June. It was Christmas party time and one of the people had cooked a whole roast pig in his China box. It looks like they did a reverse spatchcock on it and left the head on. Interesting but I won't spend that much money on something that I might use twice a year. The pig pull looked fun though.

    Dirty little secret (known mostly by people that cook whole pigs and butts) is the butts actually taste better.  And it's cheaper, less work, and you can scale it up and down and use virtually any sized smoker.  (sorry!)

    The only reason to cook whole hog is presentation. Oh, and you can cram a metric butt-load of butts on the PR-72.

    Why buy La Caja China? There is a local butcher here in MelbourneFl  who will cook one on his unit or if you buy the whole hog and invite him he will come to the party cook it and serve it, just have lots of beer for the chef!.

    Had a friend buy one, cooked on it one time and then gave it to me.  I use it about one per year, did the whole pig one time but mostly butts or ribs.  Uses a lot of charcoal.
