Semi-OT (sort-of): Marshmallow anyone?

Homemade marshmallows are far superior to the store-bought..  Here is a 9x13 marshallow (eventually cut into cubes).

    We make marshmallow all the time at work.

    There are as many recipes, most are similar.

    The one we like uses just water, sugar, gelatin and vanilla. We had one that also had corn syrup which required a candy thermometer. but like the one without due to ease.   Google is your friend.

    Don't you need egg whites also?  The one I make is similar to a meringue but with a few extra ingredients (gelatin, corn starch)

    Nope - no egg whites. That would be more like a megurine.  The other type we make uses water, sugar, corn syrup, vanilla and gelatin - also requires a candy thermometer and get to a specific temp (something most of us do regularly) before beginning the "whipping".  Can't see that the egg whites would add any additional texture or taste.

    Did some googling, didn't find one without corn syrup. Care to share the basic one you use with just water, sugar, gelatin, and vanilla?
