Pork Chops...cut em myself

No, I didn't chop up either Mia or Romy. Bought a VERY large pork loin at Costco, marked off 1-1/2" thick cuts, and sliced up a batch of pork chops. Saved some for today and Foodsaver-ed the rest. I have to say for whatever reason, they were ten times more tender than the pre-packed chops I've purchased even from Costco. I can't figure it out. I'm sure they take the same loin and cut it up the same way. So why was mine so much better. Tender, juicy, lovely things covered with some raspberry-chipotle stuff.[p]I also got a huge ribeye and did steaks out of it and a giant tenderloin and cut those into 2" hits. Very fulfilling for whatever reason. [p]mShark
