What did you do with Thanksgiving leftovers?

I didn't get to smoke a turkey for Thanksgiving but did one the following week because I wanted to try it (I've never smoked a turkey before and seeing the forum pics, I had to give it a shot). Had a bunch of leftovers so I used it to make turkey pot pie, one of my favorite childhood foods.

same here, except my wife made it in the kitchen oven.... this is a favorite of ours. we use the gravy too, which was made from pan drippings. the turkey was done in the BGE so even though the pie was cooked inside, still had a little hint of smoke from veggies and the gravy
good stuff

Turkey pot pie(s) here also. Everything goes in; mashed taters, dressing/stuffing, sweet potatoes, gravy, corn, cranberry. More of a Thanksgiving pot pie!Hood Stars, Wrist Crowns and Obsession Dobs!

Due to a bad cold epidemic, I had left the leftover turkey on November 20 at my folks, planning to return on the 23rd. To avoid the plague though I went to my brother in laws family get together where .... I caught a ten day cold. My Dad finished off my spatchcocked marinated and egged turkey.
Usually we we turn the frozen carcass into gumbo at Christmas. Mom has cubed up leftover turkey and made sloppy Joes. Soup is common as well as sandwiches that are toast with BBQ sauce and cheese and turkey that are briefly microwaved. -
WOW! There are some great ideas in that thread @GATraveller . Thanks for sharing!!!GATraveller said:There were some amazing things done with Turkey Day leftovers this year.

Just sangwiches and many turkey bowls (t-giving dinner combined and reheated in a bowl), but I have about three quarts of pretty strong stock frozen individually with 2-3 cups of chopped turkey meat added to each. Jumpstart on future soup. We were turkey-d out.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

Took leftover smoked turkey and made turkey chili, which we then smoked in the Dutch oven on the Egg...Enjoyed it at our tailgate before the last regular season game....Go Hoosiers, beat Utes!

Too lazy to do anything creative. Was at Mom's and we just had re-runs of the Thanksgiving meal until it was gone. Anything to avoid pot pie!

Yours looks like it was well done, but... it's pot pie!
I hate it when I go to the kitchen for food and all I find are ingredients!

I'm smoking another turkey breast this xmas, just for the leftovers (I made green chile stew with chopped turkey, and want more!).
