I keep thinking about that smoked duck post from a few weeks ago. Might be doing a duck this year.Mt Elgin Ontario - just a Large.

For the past few years, we had been doing goose, so for a change, I'll be doing beef plate ribs.I found a butcher who sells them in slabs of three bones, so it will be an easy cook. Just ordered some Montreal seasoning from Spice Trekkers for flavors.
Haven't decided on sides, but my older daughter, vegetarian, will be doing quiche or spanakopita.

20 pound, bone-in ham for us...our tradition is Jamie Oliver's jerk ham. Basically a marinade/glaze made from garlic, Scotch bonnet or habanero chillies, shallots, onions, green onions, bay leaves, allspice, nutmeg, cloves, rum, and malt vinegar, with a further rum/orange marmalade glaze at the end. That is it for the egg, guests are bringing lots of sides.Toronto ON
