First caveman steak

Don't know why I waited this long to try this. Best char and crust I've been able to muster with CI, SV, or on the grid. Loved it.


Almost forgot the plated shot since I was busy stuffing my face.

    BTW- some good sized lump right there.
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    A mighty fine looking steak right there Mr. @caliking ...... A favorite cook of mine and have had nothing but outstanding results. It just takes getting over the mental aspect of doing something different while being risk averse to failure. The investment in a thick steak (necessary) can be hefty....With the risk (which I believe is minimal) you get a high payback. Nice job.

    Make sure you have a nice even level of hot lump and away you go.  I generally run dome open for the cook but will cycle depending on how hot the fire becomes.  Again, many ways to get there -but it is a show-stopper for the crowd.  And yes, the protein will get devoured.

    Asheesh, (I hope I have the correct spelling) I can't believe you waited so long for a "caveman cook", they look wonderful! I do this regularly. The first time I tried this Sandy brought home about 70 bucks worth of steak and I threw them on the coals...she about sh*t!

    The plan was to grill direct, and get some good grid marks on it, so I could post a photogenic steak. Then I said "f*ck it! I'm going caveman!" IT was about 80°F when I dropped it on the coals. Guess it technically ended up as a reverse sear cook. 

    I liked this more than previous SV steak cooks. I'm a fan now.

    I had to glue a few pieces together to make that big piece in the back. 

    Seriously though, I've always had pretty big pieces of Rockwood in the bags. The lump for this cook was from a bag that was 2/3rds full.

    OMG that is beautiful (girl adjective)! The great big flat piece of charcoal is the PERFECT piece for caveman style. I've never found a piece like that...the biggest problem is making a flat and continuous bed of coals to put the steak on. My favorite steak cook.
