<p />Tried a twist on the grilled pineapple recipe that I saw here this morning. Dipped in coconut milk sprinkled with sugar cinnamon mixture. Bout' five minutes per side. came out pretty good. Next time I'll cook at 400 to get better caramelization.

jake42,[p]I'm surprised how good pineapple is off the grill. Did you use canned coconut milk, or did you puree some coconut flesh? Was the coconut flavor fairly strong, or just a back ground? Thank for any info.[p]gdenby

    gdenby,
I used canned. Next time I will leave the pineaple in the milk a little longer because the coconut flavor was not as strong as I wanted it to be. I was trying to get a Pina Colada effect.
