I cook scallops at 350° on a raised grid until the bacon is done.Here is a picture of some cooking on a soapstone pan.I like to have tarter sauce with them.

NorthWoodsEgger,[p]Grilled scallops are one of my wife's favorites.[p]I rinse the scallops in cold water and thread them on a skewer, threading the skewers through the rounded sides of the scallops (flat part up). If the scallops are large enough, you can use double skewers spaced about 1/2 inch apart. I have metal skewers, but water-soaked bamboo skewers work just fine.[p]Meanwhile, I melt butter in lemon juice using a coffee mug in the microwave (hey, it works). After the mixture cools a little bit, I brush it onto both sides of the scallop skewers. Then I dust them with a garlic/pepper/salt spice mixture (use whatever you like) before the lemon-butter congeals on the cold scallops.[p]When the scallops have reached room temperature, I sear them about 90 seconds to 2 minutes per side on a lower grid over direct heat, approx. 450 degrees. Don't overcook![p]I have a big metal spatula with slots in it that really helps when turning skewers over a hot fire. I slip one end of the skewer into the slot of the spatula and grab the other end of the skewer with my tongs. I can rotate the skewer with the tongs, using the slot in the spatula as a pivot on the other end. It requires a lot less pressure than just flipping skewers with tongs, so I don't tear the delicate scallops.

I like my scallops wrapped in Procusitto. I just dip in butter.
350 direct. Procusitto doesn't take as long to cook. But bacon gives a great flavor.[p]Mike[p]
