Sweet n Spicy Chicken and a Butternut Squash Blossom

All prep for a new Thanksgiving Bird so I tried it on a chicken instead of a turkey. Cut the recipe in half since the bird was only 6lbs instead of the 12lb turkey it called for.

Loosed the skin skin from the meat and rubbed with a mix of brown sugar, onion powder, ginger powder, dry mustard, paprika and cayenne and let it sit for 4hrs.  Then on the large indirect at 375 with some maple smoke. I brushed it with some maple syrup and hot sauce about 45mins in.

I skinned and halved a butternut squash and roasted on the small at 375 indirect for 35mins till it started to soften up.(no pics).Meanwhile I cooked 4pcs of bacon on the gasser side burner.  Once I removed the bacon I sautéed some onions with some thyme, maple syrup and S&P.  Then sliced the Butternut Squash, layered in the CI and drizzled the onion mixture on top. In the small at 425 for 40mins

Chicken is done and brushed with the syrup concoction one more time

Buttenut Squash done and the bacon sprinkled on top

And plated

Dedinately a keeper for Thanksgiving.  Thanks for looking.

Dang- I knew something was up given the powers of the diamond plate.  Great cook, skin color and especially the squash presentation.  Never a doubt; a home-run for sure.  Gonna be tough to top for Thanksgiving-may need a larger plate.  Most eggcellent.

That looks outstanding, especially the squash.  That's a classy and really tasty looking way to fix Butternut.  Bookmarked

That squash is inspirational my friend. I was thinking about posting my cook from today - but why? You win... :)
