First Smashburgers

Made smashburgers tonight for the first time via the lid from my 5 QT Lodge Double Dutch Oven.  I used a lid from a Calphalon saucepan as the "smasher".  90% lean ground for the meat, since that what was in the fridge.  1/4 lb. very loosely balled with salt and pepper.  Heated my MBGE to 500 with the pan (ok, dutch oven lid) in it.  The first two seared perfect with that crust.  I think that was due to the dry pan.  The second two didn't have the crust.  I should have wiped-out some of the grease.  

I tried to do two at a time (kids were hungry, but it was a bit tight for the smaller pan.  These reminded me of old-school burgers.  Served on slider buns, since that's what I normally use for thick sliders.  Kids and I loved the smashburgers.

    Nice work!  A minimal amount of oil works best for me. Others prefer dry pan.  Let the crust form on the ball before smash.  Nice plate brother!

    They get better every time. I have done them 4 times now and everyone says they keep improving. Amazing how something so simple can change so much.
