If I Needed a Knife = Santoku

I was bargain shopping on Amazon's deals today and ran across this beauty. I will state again, I do not NEED another knife (got a similar Henckel and Global) but dammit is this thing awesome looking. Ground to 8-12 degree it should be able to split atoms.
So, sorry for posting as I know this board is a wallet killer, but dam. I'm not convinced i don't NEED it.

Don't fear the link, just google condensed.

The Dude: This is a very complicated case, Maude. You know, a lotta ins, lotta outs, lotta what-have-you's. And, uh, lotta strands to keep in my head, man. Lotta strands in old Duder's head. Luckily I'm adhering to a pretty strict, uh, drug regimen to keep my mind, you know, limber.
Walter Sobchak: Nihilists! *uck me. I mean, say what you want about the tenets of National Socialism, Dude, at least it's an ethos.

Have you used a santoku?
i went looking for my "first" knife around the time when they started getting popular and marketed heavily
looked cool, my first real knife etc
but it doesn't suit my style of handling, i eventually found out
i use a rolling sort of cutting, better suited to the big belly, rounder, german or western chef's knife profile
the santoku has a radius bear the tip but wuickly flattens out. Better for straight down chopping in my (limited) experience
i would recommend trying it before buying. Even if relatively cheap -
Yes, I have 2 Santoku's, a Henckel and a Global. Both fantastic knives but you are correct in that they are not roller type knives. There is a video review of the knife, 2nd one from the top, in which the reviewer states your point precisely. After watching the video it's easy to see the amazing craftsmanship that went itno these knives. I have to stop looking or it will soon be in the cart.JustineCaseyFeldown said:Have you used a santoku?

Never seen square-looking hollows like that before, interesting.

If you love Japanese knives but need more of a curve, check out Shun. My husband has given me three. I love them.*******Owner of a large and a beloved mini in Philadelphia

I have a knife from here. A Masamoto HC series gyuto, very well made but as it turns out I'm not as big a fan of western style handles as I am with Japanese style. I would definitely order from there again though.smokeybreeze said:I'll just leave this here then.... They've vacuumed money out of my wallet and sent me some exceptional stuff.
