Thx ladies and gents! @chrisc133, these were just jarred oysters. I prefer local SC oysters since they are saltier than gulf oysters. But since I was frying these instead of steaming them, I figured jarred would be fine.

@Dyal_SC I don't think the jarred ones are as effective on a stiff neck....but leave the official ruling up to @theyolksonyou who is much more expierrnced on that subject.Ellijay GA with a Medium & MiniMax

Wow that looks so good! I've thought about frying on the egg, but have been a bit apprehensive. What size cast iron pot is that and do you have any issues with splatter flaring up?

Thx!! I believe it's an 8 inch lodge. It is also somewhere around 4 inches deep, which helps with spatter. No flareup issues. I just keep an eye on the temp with the thermapen. Welcome to the club. I only fry on the Mini or Mini-Max.
Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
